Pas Toi
“PAS TOI”, from the French “NON TU” (non-native vine), a homophone of “PATOIS”, the dialect in the Aosta Valley. This is a personal challenge for Henri: adding a 100% Viogner in his cellar. The variety has been less popular in a wine scene that increasingly prefers more acidity than softer and plumper notes, which characterize Viogner. These features are completely tempered in Pas Toi thanks to the peculiar Terroir of the Aosta Valley which endows the wine with the right level of salinity.
